Minny's Chocolate Pie Recipe (The Help)

Recreate Minny's Chocolate Pie
from the book/movie "The Help".
Minus her "special ingredient", of course. ;)

Minny's Chocolate Pie
*makes 1 (9 or 10") pie

1 pre-made refrigerated pie crust (or you can make your own)
1 1/2 cups granulated sugar
4 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
3/4 cup evaporated milk, chilled
2 large eggs, beaten
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract (from Mexico, preferably)
whipped cream
aluminum foil

Preheat oven to 350 degrees F.

Unroll pie crust into pie pan. Flute edges with fingers. (Watch above video to see how this is done.) Poke holes in bottom and sides with a fork. Set the pie pan on a baking sheet and bake at 350 for 15 minutes.

While crust is in oven, prepare filling. Dump sugar and cocoa into large bowl. Stir with a whisk until all lumps are gone and you have a find sand texture. Add melted butter. Now add chilled evaporated milk and stir well. This will cool down the butter. If you skip this step and add the eggs without first adding the chilled milk, you will get scrambled eggs, so please keep it in this order.

Now mix in the eggs. Stir in the salt and vanilla. Whisk another 2 minutes until you have a smooth textured batter.

Remove the pie shell from the oven and pour in the filling. Take strips of aluminum foil and cover just the pie crust edges to prevent them from burning. (Watch the above video to see how this is done.) Return the pie to the oven and bake an additional 45 minutes at 350 degrees F.

When pie is done baking, carefully remove the tin foil. Let it cool on counter and then let it chill in fridge 2-3 hours. Top the center with a large dollop of whipped cream before serving. Enjoy!!
