These colorful cupcakes are inspired by
the 1939 film "The Wizard of Oz".
They have a moist, rainbow cake
topped with a ruby red buttercream icing
giving you a treat both inside and out.

"Over the Rainbow" Cupcakes Recipe
*makes 1 dozen standard-size cupcakes
1 boxed white cake mix
3 egg whites
vegetable oil (see back of box for amount)
water (see back of box for amount)
gel food coloring tubes (red, blue, green & yellow)
decorative cupcake picks (optional)
Mix cupcake batter according to package directions. Pour into 4 bowls. Add 1/3 of each color gel tube into each bowl. You should now have 4 bowls of different color batter (red, blue, green & yellow).
Place cupcake liners in pan. Begin spooning 2 teaspoons of green batter into the bottom of each cupcake liner. Next, add 2 teaspoons of the blue batter on top of the green. Follow up with the red and then, finally, the yellow. There is no need to swirl or smooth the batter.
Place the cupcakes into a preheated oven and bake at 350(F) degrees for 15-18 minutes. Remove from oven and let cool.
1/2 cup unsalted butter, softened to room temperature
1 cup all-vegetable shortening
1 teaspoon vanilla extract
4 cups powdered sugar
4 tablespoons milk
red gel food coloring (use the remainder of the tube)
red sugar crystals/sprinkles
Place softened butter, shortening and vanilla into mixing bowl and mix on medium-high until creamy. Add in the powdered sugar, 1 cup at a time, mixing well after each addition. The icing will be dry and crumbly now. Add the milk and mix on high until light and creamy. Stir in the red food coloring.
Spoon into gallon-size plastic bag (or icing bag) and cut a 1/2" off one corner. Now you have a homemade cake decorating bag. Take one of the cooled cupcakes and squeeze a circle of icing around the perimeter. Swirl again and again until the top of the cupcake is completely covered. Now, immediately douse with red sugar crystals/sprinkles. Finish off by inserting your decorative pick in the center of the cupcake. That's it! You're done!
