The Grinch's Roast Beast

for your family's Christmas feast!

LET'S EAT FICTION!

The Grinch's Roast Beast
*serves many!!

Ingredients:

1 (8-10 pound) pre-cooked ham
4 smoked turkey legs (or very large chicken legs, cooked)
brown sugar-honey glaze (recipe is below)
2 pineapple rings
whole cloves
1 cup water
kale or other green lettuce, for garnish
lemons or other fruit, for garnish

Special items needed:

roasting pan with rack
wooden skewers
toothpicks
parchment paper
Scotch tape

Directions:

Preheat oven to 325°.

Remove all packaging from ham. Place in large roaster pan with a rack. Score the surface of the ham with a large knife so that it has a diamond pattern (watch the above video to see how this is done).

Take the fat part of a turkey leg next to the narrow side of the ham and insert a wooden skewer through both to hold it in place (this will take a few tries to avoid the bones). Do the same with a second turkey leg on the opposite side of the ham. Now take another turkey leg and butt the fat part right up against the first leg, but this one's leg will point upward (it's best to watch the video, otherwise this might be very confusing). Secure with a skewer. Repeat with 4th leg on opposite side. Now your beast should have 4 legs. It's time to make the glaze! (Directions below.)

When the glaze is ready, brush entire surface of ham and turkey legs with a generous coating (but don't use it all because you will glaze it again every 30 minutes while baking).

Next, position a pineapple ring on top of your ham and secure with a toothpick. Place another one about an inch below that one. Insert whole cloves into the pineapple rings all the way around (about 1-inch apart).

Pour 1 cup of water into the bottom of your roasting pan (this is why we use the rack) to keep your beast nice and juicy while baking.

Place Roast Beast into preheated oven and bake at 325° for 20 minutes per pound, about 2-3 hours depending on size of ham (mine took 2 hours). Make sure to glaze your beast every 30 minutes. If glaze gets too thick or cold, place it back on stove and reheat on medium-low.

While the beast is in the oven, make the parchment paper frills for the legs (watch the above video to see how easy this is).

When the beast is done, remove it from the oven and give it a few minutes to cool on your counter. Prepare a large platter (I used my Thanksgiving turkey platter) with a bed of kale or lettuce. Carefully transfer the beast over from the roasting rack to the platter (this will take 2 people and a few sturdy kitchen or BBQ tools).

Once the beast is in place, fluff up your greens and add a few pieces of fruit here and there for garnish.

Now cut your paper frills to size and tape around each turkey leg. Fluff up the frills. Now stand back and admire your creation!

Brown Sugar-Honey Glaze

Ingredients:

1/2 cup unsalted butter
1/2 cup light brown sugar, packed
1/2 cup honey

Directions:

Place butter in a medium-size saucepan and heat on high until completely melted. Reduce heat to medium. Add in brown sugar and stir until dissolved. Pour in honey and stir again. Let cook for 5 minutes until thickened. Remove from heat.

Fizzymint
*serves 10-12

Ingredients:

6 cups whole milk
2 cups heavy whipping cream
1 (14 oz) can sweetened condensed milk
2 cups milk chocolate chips
1/2 cup dark chocolate chips
1/4 cup Andes Chocolate Mints, chopped
2 teaspoons vanilla extract

Directions:

Pour milk and heavy whipping cream into a large pot set on medium-high heat. Add in the sweetened condensed milk and whisk until well combined. Raise heat to high and let come to a low boil.

Reduce heat to medium and add in milk chocolate chips. Whisk until there are no more chunks and whisk comes up clean. Add in dark chocolate chips and do the same. Repeat for mint chips. Turn heat to low and let simmer for 15-20 minutes. Make topping (recipe follows).

After 15-20 minutes, the chocolate should have thickened up and darkened. Give it a good stir before ladling into serving mugs. Top with the toasted marshmallow whipped cream. Curl up with a good book (hopefully The Topaz Road) and enjoy!

Toasted Marshmallow Topping

Ingredients:

20 large marshmallows
2 cups heavy whipping cream (chilled)
2 teaspoons vanilla extract
2 tablespoons powdered sugar

Directions:

Preheat your oven's broiler (the top cooking device or coil).

Place 20 marshmallows (flat side up) into an oven-safe dish or pan. Set on top rack, right under broiler, and let cook for 3-4 minutes until toasted and brown. Check on them often so that they don't burn. Remove from oven and let cool while you move on to the whipping cream.

Pour the cream into a large mixing bowl. Add vanilla extract. With the whisk attachment on your electric mixer, whisk on high until soft peaks form (or whisk by hand). Turn your mixer off and add in the powdered sugar. Whisk again until slightly firmer peaks form. Now add in the toasted marshmallows (they will be sticky and stretchy). Beat on medium-high until well combined and most of the marshmallows have been broken down into small chunks. Keep chilled until ready to use.

Pumpkin Pie with "Mockolate" Crust (Friends)

Make Monica's
Pumpkin Pie
with
"Mockolate" (chocolate graham cracker) Crust
with this easy recipe!
CLICK BELOW
TO WATCH NOW:

Pie Crust Ingredients:

10 chocolate graham cracker sheets
-OR-
1 1/2 cups crushed chocolate cookie crumbs (like Oreos, with the filling scraped out)
1/3 cup granulate sugar
6 tablespoons butter, melted

Pie Crust Directions:

Place chocolate grahams into a food processor and process until you have a fine, grainy texture (or place into a gallon-size Ziploc bag and smash with a rolling pin or can of vegetables). Pour into a medium-size bowl. Whisk in the sugar. Add in the melted butter and stir until all of the crumbs have been coated and can be packed down with a spoon or spatula (watch the above video to see how this should look).

Pour into a pie plate or pan and begin pressing down with a spoon or spatula (the flat bottom of a measuring cup works best). Press along the walls of the pan as well. Set into fridge to chill and so the butter will firm up and hold it all together.

Pie Filling Ingredients:

1 (28 oz) can 100% pumpkin puree
1 (14 oz) can sweetened condensed milk
5 tablespoons melted butter
the juice from half of a lemon
2 whole eggs
3 1/2 tablespoons light brown sugar
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg

Pie Toppings:

whipped cream or a tub of Cool Whip
1/4 of a milk chocolate bar, shaved with a vegetable peeler

Pie Filling Directions:

Pour the pumpkin puree, sweetened condensed milk, melted butter and lemon juice into a large bowl. Mix well and give the melted butter time to cool a bit before adding the eggs (so you don't end up with scrambled eggs).

Now, add in the eggs, brown sugar, vanilla, cinnamon and nutmeg. Mix well until it is a uniform color (no streaks). Pour into your chilled pie crust and spread evenly.

Place into a preheated oven and bake at 350 degrees (F) for 55-65 minutes (being careful not to let it burn). Let cool on counter for 2 hours.

Top with whipped cream and chocolate shavings.

Enjoy!

The Moist Maker

Ingredients:

3 thick slices of bread (use a good-quality bread or Texas Toast, no $1 loaves)
4 thick slices of oven-roasted turkey or use your Thanksgiving leftovers
1/2 cup brown gravy
1/3 cup stuffing
3 slices jellied cranberry sauce

Directions:

Take 2 slices of the bread and toast on your toaster's LIGHTEST setting (we only want to slightly firm up the bread, not toast it completely). Set the 3rd slice aside for later, do not toast this one at all.

Place 1 of the toasted slices on a plate. Top with the turkey. Set aside.

Pour brown gravy into a pie plate or other shallow dish. Place the 3rd (untoasted) slice of bread face down into the gravy (watch the video above to see how this is done). Give it a minute to soak up the gravy. Now flip it over and let the other side soak in it. This is the "Moist Maker". Place this gravy-soaked slice on top of the turkey layer.

Now top the "Moist Maker" with stuffing. Spread it and pack it down; the gravy works like a glue. Gently place 3 slices of cranberry sauce on top of the stuffing. Finish off with the second slice of toasted bread. Press down gently.

Make these bloody (cherry-filled) cupcakes
the next time you watch
Hitchcock's Psycho.

Psycho Cupcakes

Cupcake Ingredients:

1 dozen red velvet cupcakes, baked and cooled
1 can cherry pie filling
1 pkg Wilton candy knives
1 tube red edible writing gel

Cupcake Directions:

Cut a 1-inch deep, 1-inch diameter circle out of the center of each cupcake (watch the above video to see how this is done). Remove the piece of cake and set it aside. Fill the holes with cherry pie filling. Now, go back to the piece of removed cake and cut off the point/peak so you have a flat lid (it helps to watch the video to understand this part). Replace the lid on the cupcake, covering the hidden filling. Now, make your icing (recipe below).

Make a swirl on top of each cupcake, making sure to cover the seam of the replaced lid. Add a dollop of red writing gel in the center of the frosting. Add a few random drops and splats to the rest of the frosting. Now insert a knife into the center of each cupcake.

Buttercream Icing Ingredients:

1 cup butter, softened to room temperature
1 cup all-vegetable shortening
1 teaspoon vanilla extract
6 cups powdered sugar
2 tablespoons milk

Icing Directions:

Place butter, shortening and vanilla in a large mixing bowl. Mix on medium with an electric mixer until creamy. Add in the powdered sugar, 1 cup at a time, mixing well after each. Add the milk and mix on high until creamy (about 3-4 minutes). Spoon into icing bag or gallon-size Ziploc bag with the bottom corner cut off about 1/2 inch.

Red Devil Cupcakes

Cupcake Ingredients:

1 dozen (standard-size) devil's food cupcakes, baked and cooled
12 large marshmallows
red sugar crystals/sprinkles
24 Hershey's Dark Chocolate Kisses, unwrapped

Cupcake Directions:

Cut a 1-inch diameter, 1-inch deep circle out of the center of each cooled cupcake (watch the above video to see how this is done). Remove the center piece of cake and set aside. Insert a large marshmallow into the hole (to represent the cotton balls the Chanels often eat). Now, go back to the removed piece of cake and cut off the point. Replace the flat piece on top, like a lid, covering the marshmallow. Now make your red icing (recipe below).

Using the icing bag or Ziploc bag, make a swirl on top of each cupcake, making sure to cover the seam of the replaced lid. Immediately sprinkle with red sugar crystals. Place a Hershey Kiss on each side of the frosting for the devil horns.

Buttercream Icing Ingredients:

1 cup butter, softened to room temperature
1 cup all-vegetable shortening
1 teaspoon vanilla extract
6 cups powdered sugar
2 tablespoons milk
red gel food coloring

Buttercream Directions:

Place the butter, shortening and vanilla in a large mixing bowl. Mix on high with an electric mixer until creamy. Add the powdered sugar, 1 cup at a time, mixing well after each cup has been added. Add milk and mix again on high until creamy (about 3-4 minutes). Stir in red gel food coloring until it reaches the desired color. Spoon into cake icing bags or a gallon-size Ziploc bag with one bottom corner cut off about a half-inch (see the above video).

2 (11.5 oz) pound cakes, chilled
2 lbs fresh strawberries, sliced in half
1 lb fresh blueberries
1 lb fresh raspberries
star cookie cutter
wooden kabob sticks (optional)
Cool Whip (optional)

Directions:

Set chilled pound cake on its side. Cut a 1/2-inch slice off bottom layer (Watch the above video to see how this is done). Set aside larger portion. Using cookie cutter, cut out a star shape. Set aside.

Set cake on side again and now cut another 1/2-inch slice off the middle. Cut this slice into 1-inch cubes.

Cut off the uneven mound from the top and last layer. Cut this slice into 1-inch cubes and star aside.

Repeat all steps for second pound cake.

Cut back ends (with leaves) off all strawberries and then slice them in half down the middle. Set aside.

Set one of the cake stars in the center of your round party tray.

Beginning out the outer edge, make a line of strawberries against the wall of your platter, rotating the direction of each berry.

Next, place a row of cake cubes just inside the strawberry row. Repeat with a second row of cake cubes.

Now add a row of raspberries, rotating directions like you did with the strawberries.

Finally, fill in around the cake star with blueberries.

Top the first star cake with the second cake star.

18 lemon slices

Lemon Syrup Directions:

Pour water and 1/2 cup sugar into a medium-sized saucepan. Whisk until there are no more granules. Add lemon slices. Bring to a boil for 10 minutes. Let cool. Remove candied lemon slices. Set them aside. Add the other 1/2 cup of sugar to the water and whisk. Bring to a rolling boil again. Remove from heat and let cool completely until thickened.

Lemon Cake Ingredients:

2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened to room temperature
1 cup sugar
2 eggs (or 1/3 cup applesauce)
3 tablespoons lemon juice
3 tablespoons lemon curd (found in jam & jelly aisle of grocery store)
a handful of fresh blueberries
non-stick spray

Lemon Cake Directions:

In a large bowl, mix: flour, baking powder, baking soda and salt. Set aside.
