QUEEN OF HEARTS' CUPCAKES
24 red velvet cupcakes, baked and cooled
cream cheese icing (recipe follows)
Valentine's-themed cupcake liners
1/2 cup chocolate chips/morsels
Bake cupcakes according to package or recipe directions. Let them cool (preferably overnight).
For Cupcake Design #1:
Cut a small heart shape from a piece of paper. Lay the heart on top of the cupcake. Using a sifter, sift (or sprinkle) powdered sugar over the entire surface of the cupcake. Remove the paper heart. That's it! You're done!!
For Cupcake Design #2:
Make cream cheese icing (recipe below). Fill a cake decorating bag (or gallon-size freezer bag) with icing. Cut 1" off corner of bag. Squeeze icing into a circle on surface of cupcake, build up while swirling (watch the above video to see how this is done). Add sprinkles and a Valentine's-themed pick.
For Cupcake Design #3:
Melt 1/2 cup of chocolate chips in microwave or stovetop. Pour into a candy decorating bottle (found near candy molds at craft store). Draw fancy heart shapes onto a piece of wax paper (watch the video above). Place hearts in freezer for 5 minutes to harden.
Swirl icing on top of cupcake. Add a chocolate heart. Enjoy!!
PINK CREAM CHEESE ICING
8 ozs cream cheese, softened
1/2 cup butter, softened to room temperature
1/2 teaspoon vanilla extract
4 cups powdered sugar
2 tablespoons milk
pink food coloring
Place cream cheese, butter and vanilla in mixing bowl. Blend with an electric mixer until creamy. Add powdered sugar, 1 cup at a time, mixing well after each. Add milk. Mix again. Stir in food coloring until it reaches the desired color.
