These chewy, chocolate cookies are to die for!!

*makes 2 dozen
1/2 cup applesauce
1/2 cup all-vegetable shortening
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 of a 3.5 oz chocolate bar
In a large bowl, add: applesauce, shortening, brown sugar and granulated sugar. Mix with an electric mixer until you have a grainy paste. Add: baking powder, baking soda, salt and vanilla. Now add 1 cup of the flour. Mix well until creamy. Add in second cup of flour. Mix again until you have a semi-thick dough. Let sit for 3-5 minutes.
Place half the chocolate bar into a small, microwave-safe bowl. Heat for 1-2 minutes until melted, stirring well after each minute. Now, pour the melted chocolate into the bowl of cookie dough. Mix until well incorporated. The cookie dough should now look like chocolate ice cream. (Carol's recipe does not include luxury items like: chocolate chips or nuts but since we're not in a Zombie Apocolypse, you're welcome to add them.)
Preheat oven to 350 degrees (F).
Using a cookie dough scoop or spoon, place 1 1/2" balls of dough onto a baking sheet lined with parchment paper. Only place 8 balls per sheet to allow room for expanding. Set in oven and bake at 350 degrees for 11-13 minutes. Remove from oven and let cool completely. Serve with a tall glass of milk!
