Butterbeer Ice Cream
1 (14 oz) can sweetened condensed milk
1/2 teaspoon vanilla extract
1/3 cup butterscotch syrup
1 pt (16 ozs) heavy whipping cream, chilled
In a large bowl, mix: sweetened condensed milk, vanilla and butterscotch syrup. Set aside.
With an electric mixer, beat heavy whipping cream until soft peaks form (about 3 minutes). Gently fold whipped cream into the butterscotch mixture until there are no more ribbons of yellow/gold. Pour into a plastic container (like Gladware) and secure with lid. Place in fridge and chill for a minimum of 4 hours.
Remove from fridge and scoop into cups or cones or your souvenir Butterbeer Mug. Enjoy while watching your favorite Harry Potter movie!!
