Butterbeer Ice Cream (Harry Potter)

You are only 4 ingredients away from Butterbeer Ice Cream...

Butterbeer Ice Cream

Ingredients:

1 (14 oz) can sweetened condensed milk
1/2 teaspoon vanilla extract
1/3 cup butterscotch syrup
1 pt (16 ozs) heavy whipping cream, chilled



Directions:

In a large bowl, mix: sweetened condensed milk, vanilla and butterscotch syrup. Set aside.

With an electric mixer, beat heavy whipping cream until soft peaks form (about 3 minutes). Gently fold whipped cream into the butterscotch mixture until there are no more ribbons of yellow/gold. Pour into a plastic container (like Gladware) and secure with lid. Place in fridge and chill for a minimum of 4 hours.

Remove from fridge and scoop into cups or cones or your souvenir Butterbeer Mug. Enjoy while watching your favorite Harry Potter movie!!

Chicken Shawarma

Marinade Ingredients:

1/2 cup lemon juice
2 tablespoons tomato sauce
4 tablespoons plain Greek yogurt
3 tablespoons white vinegar
2 tablespoons olive oil
1 head of garlic, minced
1 1/2 teaspoons salt
1/2 teaspoon oregano
1 teaspoon paprika
pinch of nutmeg

Other Ingredients:

2 1/2 lbs. boneless, skinless chicken thighs
pita bread
garlic aoili spread
San Marzano tomatoes (or Roma tomatoes)
olive oil (for roasting tomatoes)
lettuce
salt & pepper
French fries (optional)




Day 1 Directions:

Cut chicken thighs into thin (1/2"-wide) strips. Place into large casserole dish.

Pour all of the marinade ingredients into a blender. Blend for 1-2 minutes until well mixed. Pour over the chicken. Cover with foil or plastic wrap and let sit in the refrigerator overnight to marinate.

Day 2 Directions:

Preheat an indoor electric grill (George Foreman) or a panini press. Place strips of the marinaded chicken directly on grill. Close lid and cook for 10 minutes or until done. Transfer to plate and then repeat steps.

When all the chicken has been cooked, use 2 forks to shred strips (watch the above video to see how this is done).

Cook fries according to package directions.

Drizzle a bit of olive oil into a small pan. Roast tomatoes until soft and blistered. Season with salt and pepper.

Heat pitas in oven until warm. Spread some of the garlic aoili onto the top of a pita. Place lettuce on top. Add a layer of cooked chicken and then some of the roasted tomatoes. Serve with a side of fries.

BANTHA MILKSHAKE
*makes 20 ounces

Ingredients:

1 cup vanilla ice cream (or more if you like a thicker milkshake)
3/4 cup coconut milk
1/2 teaspoon vanilla extract
1 tablespoon sugar
liquid blue food coloring
whipped cream
Pop Rocks Candy
neon straws

Directions:

Place ice cream into blender pitcher. Add milk, vanilla and sugar. Blend on medium or milkshake setting. Add a few drops of food coloring. Blend again.

Pour into a tall glass. Top with whipped cream and sprinkle with Pop Rocks. Insert two straws as Lightsabers. Enjoy while watching your favorite Star Wars Episode!!

Weasleys' Fever Fudge (Harry Potter and the Order of the Phoenix)

Warning: It won't make you sick...but it does have a kick!

Weasleys' Fever Fudge

Ingredients:

3 cups white chocolate chips or baking morsels
1 (14 oz) can sweetened condensed milk
1 teaspoon vanilla extract
blue food coloring
1/2 cup cinnamon jelly beans or red hots


Directions:

Place chocolate chips in a microwave-safe bowl. Pour sweetened condensed milk on top. Heat in microwave in 30 second intervals until completely melted, stirring well after each interval.

Stir in vanilla.

Add a little bit of food coloring at a time until you reach desired color.

Pour in red hots and mix well. Sprinkle a few more red hots on surface of fudge. Do not mix those in.

Pour into a 9x7" or 8x8" dish lined with wax paper. Smooth with a spatula until you have an even layer. Place in fridge for 1 hour to firm up.

Turn out (upside-down) onto a cutting board. Cut a thin layer off the four ends to give you a clean edge (watch the above video to see how this is done). Now cut the fudge into 2x3" rectangles (or smaller if you like). Turn the pieces over (right-side up).

"Bloody" Popcorn
*makes about 32 cups

Ingredients:

16 ounces Kettle Corn
1 (12 oz) bag Wilton Candy Melts in Red



Directions:

Pour kettle corn into a large bowl. Set aside.

Place Candy Melts into a microwave-safe bowl. Heat on medium heat in 30 second intervals until completely melted, stirring after each interval. 

Pour over kettle corn. Stir well until completely coated.

Spoon kettle corn onto several baking sheets lined with wax paper. Let sit on counter for 30 minutes until set (do not refrigerate). 

Serve in popcorn buckets or bags. Store leftovers in air-tight containers or Ziploc bags.
