Make Chicken Shawarma Sandwiches

1/2 cup lemon juice
2 tablespoons tomato sauce
4 tablespoons plain Greek yogurt
3 tablespoons white vinegar
2 tablespoons olive oil
1 head of garlic, minced
1 1/2 teaspoons salt
1/2 teaspoon oregano
1 teaspoon paprika
pinch of nutmeg
2 1/2 lbs. boneless, skinless chicken thighs
garlic aoili spread
San Marzano tomatoes (or Roma tomatoes)
olive oil (for roasting tomatoes)
salt & pepper
French fries (optional)
Day 1 Directions:
Cut chicken thighs into thin (1/2"-wide) strips. Place into large casserole dish.
Pour all of the marinade ingredients into a blender. Blend for 1-2 minutes until well mixed. Pour over the chicken. Cover with foil or plastic wrap and let sit in the refrigerator overnight to marinate.
Day 2 Directions:
Preheat an indoor electric grill (George Foreman) or a panini press. Place strips of the marinaded chicken directly on grill. Close lid and cook for 10 minutes or until done. Transfer to plate and then repeat steps.
When all the chicken has been cooked, use 2 forks to shred strips (watch the above video to see how this is done).
Cook fries according to package directions.
Drizzle a bit of olive oil into a small pan. Roast tomatoes until soft and blistered. Season with salt and pepper.
Heat pitas in oven until warm. Spread some of the garlic aoili onto the top of a pita. Place lettuce on top. Add a layer of cooked chicken and then some of the roasted tomatoes. Serve with a side of fries.
