Ingredients:
*makes about 2 dozen cookies

2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2/3 cup sugar
1/2 cup light brown sugar
6 tablespoons unsalted butter, softened
1/3 cup peanut butter
1 teaspoon vanilla
2 eggs
1/4 cup milk
1 cup milk chocolate chips
24 Rolo candies, unwrapped (or caramel-filled Hershey Kisses)

Directions:

Mix flour, salt, baking soda, sugar and brown sugar in a large bowl with an electric mixer. Add softened butter, peanut butter, vanilla and eggs. Mix again. Texture will be dry and crumbly. Pour in milk and mix until dough is creamy. Stir in chocolate chips.

Set bowl of dough in freezer for 10-15 minutes to firm up. In the meantime, begin unwrapping your Rolo candies. Set aside.

Take dough from freezer and scoop out a 1 1/2-inch ball. Split the dough ball in half. Place a Rolo candy in the center and then cover the top with the other half. Seal the sides so that the entire Rolo is covered with dough (Watch the above video to see how this is done). Place on a cookie sheet lined with parchment paper. Do this for all the dough.

Bake in a preheated oven at 325 degrees (F) for 15-17 minutes until golden brown. Remove from oven and let sit for 5 minutes to cool.

Sansa's Lemon Cakes
*makes 18 mini-cakes

Lemon Syrup Ingredients:

1 cup water
1/2 cup sugar + another 1/2 cup sugar
18 lemon slices

Lemon Syrup Directions:

Pour water and 1/2 cup sugar into a medium-sized saucepan. Whisk until there are no more granules. Add lemon slices. Bring to a boil for 10 minutes. Let cool. Remove candied lemon slices. Set them aside. Add the other 1/2 cup of sugar to the water and whisk. Bring to a rolling boil again. Remove from heat and let cool completely until thickened.

Lemon Cake Ingredients:

2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened to room temperature
1 cup sugar
2 eggs (or 1/3 cup applesauce)
3 tablespoons lemon juice
3 tablespoons lemon curd (found in jam & jelly aisle of grocery store)
a handful of fresh blueberries
non-stick spray

Lemon Cake Directions:

In a large bowl, mix: flour, baking powder, baking soda and salt. Set aside.

In a separate bowl, beat softened butter and sugar with an electric mixer. Add in eggs, lemon juice and lemon curd. Mix again. Add half of the flour mixture. Mix well. Add the remaining half of flour mixture. Mix until creamy.

Spray a standard-size cupcake/muffin pan with non-stick spray. Drop 1 or 2 blueberries into each muffin cup. Now place a candied lemon slice into the bottom of each so that it lays flat (watch the above video to see how this is done). Do this for all muffin cups.

With an ice cream scoop or large spoon, drop mounds of the cake batter into each muffin cup. Place into a preheated oven and bake for 15-18 minutes at 350 degrees (F). Cakes are done when a toothpick inserted in center comes out clean. Let cool completely.

Carefully turn cakes out onto cooling racks so that the lemon slice and blueberries are on top. Let cakes cool. To serve, place cake on plate and drizzle with lemon syrup. Enjoy while watching your favorite season of Game of Thrones!!
