How I Met Your Mother Cookies


Make cookies just like the ones "the mother"

These chocolate, peanut butter, caramel-filled cookies
are sure to become your all-time favorite!

Ingredients:
*makes about 2 dozen cookies

2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2/3 cup sugar
1/2 cup light brown sugar
6 tablespoons unsalted butter, softened
1/3 cup peanut butter
1 teaspoon vanilla
2 eggs
1/4 cup milk
1 cup milk chocolate chips
24 Rolo candies, unwrapped (or caramel-filled Hershey Kisses)

Directions:

Mix flour, salt, baking soda, sugar and brown sugar in a large bowl with an electric mixer. Add softened butter, peanut butter, vanilla and eggs. Mix again. Texture will be dry and crumbly. Pour in milk and mix until dough is creamy. Stir in chocolate chips.

Set bowl of dough in freezer for 10-15 minutes to firm up. In the meantime, begin unwrapping your Rolo candies. Set aside.

Take dough from freezer and scoop out a 1 1/2-inch ball. Split the dough ball in half. Place a Rolo candy in the center and then cover the top with the other half. Seal the sides so that the entire Rolo is covered with dough (Watch the above video to see how this is done). Place on a cookie sheet lined with parchment paper. Do this for all the dough. 

Bake in a preheated oven at 325 degrees (F) for 15-17 minutes until golden brown. Remove from oven and let sit for 5 minutes to cool.
